Tis the season of Seasonings and historically one of the most common combinations of Seasoning is that of Onion and Garlic. Both are part of The allium family where nutrients are stored in their Bulbs, however the benefits to each are very different (see the end of the Fun Fact for a list). Interestingly since they have similar compounds they actually react when cooked together helping to mellow out each other's flavor reducing the chance they overpower a dish’s profile. This also makes their flavor more deeper and more complex which is why it's a common base for many dishes across the world today.
Garlic
A good antimicrobial and whose smell can be used to pests

Proven to be beneficial against a variety of illnesses but best documented by modern science for its benefit in preventing and fighting the Common Cold.
Onion
High in antioxidants which helps lower blood pressure, and inflammation

By helping protect cells from damage it is encouraged by several European countries to eat it for those at high risk of cancer as a potential preventative treatment in the same way Almonds are.

Good source of Prebiotics that are beneficial to bacteria found in the guts helping to improve digestion and reduce the severity of certain illnesses like IBS.
