Squeaky Cheese
If you’ve ever had freshly made Cheese curds you may have noticed that they squeak as you eat them. This is because cheese is made up of proteins bound together by calcium. When the cheese is freshly made the protein Network is tightly bound allowing it to “Rebound” from the enamel in your teeth creating that squeaky cheese.
If you don’t want the Squeak, then fear not the calcium bonds are easy to break, either heat up the cheese, freeze it, or wait 〜48 hours for the proteins to break on their own.
