The Roast Beef’s Revenge
50 years after Corned beef first came to prominence The Salt Tax was repealed allowing domestic cattle ranchers to compete once more and those who liked the taste of salt now had a cheaper source of high quality salt. Once more roast beef rose to prominence as corned beef began to fade.
Then came the dark times, then came the Potato famine. With failing crops, homes being seized and starving families, where did the people of Ireland turn to? Where else but corned beef, which had so conveniently just been made affordable to local populations. The dish gave many families the time they needed to flee to other colonies like The American Colonies or Southern Africa. As they fled they took the dish with them, spreading it to the rest of the world, ensuring the survival of the dish which had saved them.
Since then it regularly still comes to blows with Roast Beef, but due to its hardy nature when depressions hit, Corned beef always becomes king once again. I guess these two dishes will always have some beef with each other.
